An Overdue Post and Some Fudge! :)

This post is long overdue. My body is healing. The Lord is giving me great things through my natural doctor and the diet I am on. Slowly, my immune system is calming down and getting back on the track it is supposed to be on. I have finally started getting back on my feet (natural healing is always a longer process)…but now that I’m up and running more, there are plenty of new recipes to try! ;) So, we will start out with this one!

I, of course, am a chocolate fanatic…so finding chocolate that will fit into my “oh so restricted” diet is darn near impossible…but I was able to find some YUMMY FUDGE! So I thought you all might like to try it with me. :D

We will just call this…ChocoAlmond Fudge…it’s the simplest thing ever, but oh so tasty! And even better, it qualifies as a “raw food” recipe! ;)

ChocoAlmond Fudge

  • 1 cup organic almond butter (no sugar added)
  • 1/4 cup extra virgin coconut oil
  • 1/2 cup cocoa powder
  • 1/4 cup honey
All you have to do is throw all of the ingredients in a bowl and mix them together. Once they are well combined, pour it into a small glass pan that you have lined with parchment. I usually use one of our little 5×7 (3 cup) pyrex. Pop it in the fridge for an hour or so, and you are ready to feast on yumminess! This makes 9 servings. I hope you enjoy! :D

This recipe is perfectly balanced for those of you watching your insulin. 15 grams of carbs to 5 grams of protein…wont spike you at all as long as you are eating it in servings ;)
