I have been craving me and unwich for a looooong time…so I finally decided that I was just going to figure out how I could make one at home! Something with all the ingredients that are good for me and none of the ones that aren’t. So here it is!
We had this for the first time last night, and it will definitely be on the menu roll from here on out! Steven loved it even more than I did I think!
What you will need…
- 2 large collard leaves
- some mustard of your choosing
- 1 avocado (we only used 1/2 on the wraps because Steven doesn’t care for them)
- Some veggies of your choosing – we used some thin sliced cucumbers, tomatoes, and onions…just whatever you have on hand will be fine
- 2-3 oz of meat – ours was the Applegate Farms Organic Turkey due to the fact that it is about the only lunchmeat in existence that we could find that had nearly no additives. It still contained carrageenan, and it was rather pricey, so it will be a special treat. The rest of the time we will used some sliced steak or seasoned chicken breast.
And that’s about it. You can add anything else that you like that sounds good…maybe some sprouts or bell peppers. Any veggie would be great in here!
Start with your collard leaf and spread it with the mustard. Then place your meat. I find that it works best in the middle…I roll it more like a taco and not a traditional spiral type wrap.
(please note that in all of these pictures, I have my ingredients on the WRONG end of the collard leaf. Had to use a spatula at the end of construction in order to slide everything to the other side. So please, don’t make the same silly mistake that I did. )
Then start adding your veggies. I started with the tomato and avocado…
Then added the onion and cucumber…
Finally, wrap up the contents like you would a taco. Start with the top of the collard (not where the stem comes out) and fold it about 1/4 to 1/3 of the way up…just up to where your pile of veggies starts. Then take one of the 2 sides and start to roll it up taco/burrito style. Works great!
