Amy’s Veggie Blend – (AIP)

I thought that this veggie blend would be an important recipe to get up on the blog. It has quickly become a favorite to add to recipes, so I thought I should probably be letting everyone know how to make it. It’s quite simple really. This is just an easy way to make sure you are eating more vegetables without having to THINK about eating more vegetables. 😉

I put this in my burger patties, meatballs, cabbage rolls, and many many other recipes. It’s a great thing to make up ahead of time and freeze, or just fly by the seat of your pants and use what you have available at the time. There really is no wrong way to do it.

Go to your fridge and pull out any random veggie that sounds good to you, that you may need to be finishing up, or that you just like the taste of.

Kale, spinach, onion, carrot, broccoli, squash, beets, garlic, cauliflower, cabbage, etc…

Throw a few hand-fulls of any combination that you like into your food processor.

Turn it on until they are all finely chopped and well combined.

And there you have it. It’s that simple! 🙂

This makes the perfect veggie addition to many dishes. I usually add about 1 cup of veggie blend per pound of meat. 😉
