Everyone needs a sweet treat during the holidays. These are the yummy Chocolate Chip cookies that Steven and I whipped up this morning. They are quick and easy and oh so tasty! Plus, they are paleo AND gluten, egg, and dairy free! Can’t beat that! I adapted this recipe from Elana Amsterdam’s, found in her “Gluten-free almond flour cookbook.” We have used it many times over the last few years. I felt that it was high time that I shared it! 😉
You will need:
- 2 1/2 cups blanched almond flour
- 1/2 teaspoon sea salt
- 1/2 teaspoon aluminum free baking soda
- 1/4 cup extra virgin olive oil
- 1/4 cup raw honey
- 2 teaspoons homemade vanilla
- 1/4 cup Enjoy Life Chocolate Chips
Preheat the oven to 350 degrees.
Line a cookie sheet with parchment paper and set it aside.
Then simply combine all of the dry ingredients into a medium glass bowl. A fork usually works best for me.
Use a cookie scoop to place 12 balls of dough onto your cookie sheet. Simply use the palm of your hand to pat them flat. About 1/4 of an inch thick will do.
