Chocolate Chip Cookies

Chocolate Chip CookiesEveryone needs a sweet treat during the holidays. These are the yummy Chocolate Chip cookies that Steven and I whipped up this morning. They are quick and easy and oh so tasty! Plus, they are paleo AND gluten, egg, and dairy free! Can’t beat that! I adapted this recipe from Elana Amsterdam’s, found in her “Gluten-free almond flour cookbook.” We have used it many times over the last few years. I felt that it was high time that I shared it! 😉

ingredients

You will need:

  • 2 1/2 cups blanched almond flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon aluminum free baking soda
  • 1/4 cup extra virgin olive oil
  • 1/4 cup raw honey
  • 2 teaspoons homemade vanilla
  • 1/4 cup Enjoy Life Chocolate Chips

Preheat the oven to 350 degrees.
Line a cookie sheet with parchment paper and set it aside.
Then simply combine all of the dry ingredients into a medium glass bowl. A fork usually works best for me.

In another small bowl, or a glass measuring cup, combine all of the wet ingredients.

Make a small well in the middle of the dry ingredients, and add the wet ingredients to the dry.

Mix with a fork or spoon until it is well combined. Then add your chocolate chips, and mix again until they are thoroughly distributed.

Use a cookie scoop to place 12 balls of dough onto your cookie sheet. Simply use the palm of your hand to pat them flat. About 1/4 of an inch thick will do.

Bake for 5-9 minutes until the bottom edges of the cookies start to golden.
