Having to learn to cope with these new diet restrictions seems darn near impossible…but these brownies that my sister Debi created for me are by far worth the hassle!! 😉 We love them! Even hubby is totally crazy over them. They are gluten free, dairy free, and refined sugar free…and they are a “must try!”
- 5 tablespoons extra virgin coconut oil
- 10 tablespoons cocoa
- 1/2 cup butter
Melt all together in a small saucepan over low heat. Everything else is done in my Kitchen AidÂ mixer 🙂
- 2 eggs
- 1/2 cup raw honey
- 3 1/2 oz almond flour (1 cup loose or 3/4 cup packed)
- 1/4 cup brown rice flour
- 1/2 teaspoon celtic sea salt
- 1/4 teaspoon baking soda
- 2 teaspoons vanilla
Preheat your oven to 350 degrees.
Start by beating the eggs in your mixer until frothy. You then add the honey and beat again until smooth. While the mixer is running, slowly add in the chocolate mixture a little at a time. After the chocolate is combined, add the remaining dry ingredients. Mix everything well and finally add the vanilla. You will need to lightly grease an 8×8 pan with butter or coconut oil before adding the batter to the pan. Bake in your preheated 350 degree oven for about 25-30 minutes or until a toothpick comes out clean from the center. 😉
Be sure not to over-bake.
Chill before cutting.Â We store these in the freezer and absolutely love the texture they have from there!
