I have never been a fan of hot cereals. Mom could never get me to eat oatmeal, let alone cream of wheat or anything like that. But oh how I love my rice cereal! Thank you soooo much Chantale for the wonderful recipe! She has had me on this as part of my “gut healing” protocol, but I think it will stay in the rotation even after I am done with this phase! LOVE IT! Steven is nuts about it too…and it is sooooo simple to make.
I didn’t have to do much as far as changes AT ALL…just added some cinnamon and changed out the rice for some quinoa at times. We have also added some hemp seed here and there, and really love that as well! Whatever you choose to add to it, it is sure to please! 😀
We have started keeping a container of cooked rice and cooked quinoa in the fridge, so it makes this recipe even more “last minute” and easy. You can always freeze them using your ice cream scoop as well (we have done that with quite a bit of rice)…then you can just grab however many servings you need from the freezer and throw them right in the pan. 🙂
For ONE serving of cereal you are going to need:
- 1/2 cup cooked quinoa or 1/4 cup WELL cooked white rice
- 1 banana
- 1/4 cup nut milk (we have been using homemade sesame milk)
- 1 tablespoon almond butter
- 1 teaspoon (or more) cinnamon
In a 1 quart sauce pan, peel and mash the banana until it is a nice, gooey consistency. 🙂
After that, you are going to add your almond milk, nut butter, and cinnamon. Mix it until it is all well combined.
Finally, add in your quinoa (or rice)…mix well, and then place in on the stove over medium heat. Stir frequently to avoid sticking. Simply cook until it is the temperature that best suits you, and serve! It’s that easy! Takes us about 15 minutes, start to finish, if we don’t have to make nut milk. 😀
