Peas & Carrots Casserole

peas and carrotsThis new diet change has not been near as much of a challenge as I thought it was going to be. For the most part, I am still blending everything, to make it super easy to digest…but there are times when I just feel like chewing, so I cook me some stuff that will curb that craving a bit. This is where the Peas & Carrots Casserole comes in! 😉 This recipe is super simple and very filling and tasty. I think it would be amazing if you wanted to add a pound of grass fed burger to it also! But I am quite satisfied with it as a vegetarian entree. 😀

So, all you are going to need is…

  • 1/2 cup diced red onion
  • 4 cups cooked spaghetti squash
  • 2 – 16oz bags of frozen peas and carrots (I used 365 organic brand)
  • 3 1/2 cups of my Country Gravy (we always have some in the freezer! 😉 )
  • salt and pepper to taste

In a medium pot, bring some water to a boil and add your onion and 2 bags of peas and carrots. We want to cook these until they are pretty soft (for my easy to digest protocol)…

Once you feel they are the right texture, you are going to strain them and place them into a 5 quart sauce pot  (you could always boil them in the 5 quart to save on dishes 😉 ) It is here that you will add the spaghetti squash and mix them together until they are very well blended. Make sure that your burner isn’t on yet, you don’t want to burn the squash. 😉

Now simply add the Country Gravy and mix well.

Once you have it mixed, you can turn the burner on to heat everything thoroughly, season with salt and pepper, and serve. You don’t have to serve it right away though. This made 6 heaping freezer meals for me! I love having stuff in the freezer for an easy meal when I’m just not feeling up to cooking! So it is whatever works for you. 😉
