This Strawberry Chicken Salad was a life saver for me last week! I was getting so burnt out on my “same ol same ol” salad….I needed something fresh with some new flavors…Something to keep my palate excited. This salad was the perfect solution!! 😀 The strawberries give it a slight bit of sweet and tart, the avocado creams it up nicely, and the cucumber offers the awesome crunch I was looking for. 🙂
For the salad you are going to need:
- 4 cups (2 1/2 to 3 oz) Zen blend greens (or any other yummy combination that you enjoy)
- 1/4 cup (1 oz) sliced red onion
- 1/2 cup sliced cucumber
- 1/2 avocado, cubed
- 3/4 cup (3 oz) cooked chicken breast, cubed
- 4 medium to large strawberries, sliced
You are, of course, going to start with your greens. Be sure to wash them well, you can never be too careful. I love using my salad spinner to get them super dry after washing…helps to keep them fresher longer. 🙂
Next, slice the cucumbers and toss them in, as well as the onions….I mean, this isn’t salad rocket science here. 😉 This was such an easy peasy recipe!
After that, I added the avocado. If you are not familiar with the easy way to dice avocado, this picture should help. Use your knife to slice it several times in both directions. Next, just use a soup spoon to scoop it out and spread it evenly on the salad. 🙂
Add the chicken
Then slice your pretty and delicious strawberries and add them to the top!
Finally, we need a simple, yet super tasty dressing.
For the Sweet Balsamic Dressing:
- 2 tbsp evoo
- 1 tbsp balsamic
- 1 tsp maple syrup
This can serve 1 to 2 salads depending on your taste preference. 😉
Literally, all that is needed is a small jar. I used a 4 oz Ball jar from Walmart, and it worked perfect! Dump all three ingredients into the jar, seal it tightly, and shake. It’s that simple! Then drizzle over the top of the salad, and lightly toss.
