Homemade Dark Chocolate!

So, I have been reading all of the awesome research that supports the high content of antioxidants found in dark chocolate…there is also tons of stuff suggesting that because of this high content, it can be very benificial in helping with disease. Along with a healthy diet of course! ;)

But you all know me, I’m not a fan of the “processed” stuff…and for some reason, just can’t bring myself to think that store-bought candy bars could help me in the slightest…lol. So I was on a mission! (cause who doesn’t love the idea of chocolate being healthy!?!?) And I found a way to make it at home! And it’s totally easy! :D And the only downfalls I have found are….

1. I don’t want to STOP eating it!

2. It is best kept in the fridge until you are ready to indulge because it is made with coconut oil, and will melt if you keep your house pretty warm (which we have to do b/c dad is staying here ;) )

But none the less, you HAVE to try it!!! It’s sooooo easy, and remarkably good (for those of you that like dark chocolate) My husband will be beside himself with joy when he gets home! ;)

So, all you need is….

  • 5 tablespoons Extra Virgin Coconut Oil
  • 6 tablespoons Baking Cocoa
  • 1 1/2 tablespoon Raw Honey
  • 1/4 teaspoon Vanilla

Melt the coconut oil on medium heat in a small sauce pan

Remove from the heat and stir in the remaining ingredients

Coat a small glass pan with waxed paper

…and dump in the yummy chocolate concoction

Place in the fridge until hardened…then you take it out and cut it up all pretty…and eat away! :P

  3. My dark chocolate with almonds is in the fridge setting up. I didn’t have honey so I used a little bit of sugar. Can’t wait to eat some!!

  4. Looks wonderful. I make a similar chocolate with raw cacao powder–I think I may never go back to cocoa! I find the cacao much less bitter, so even sweetened with stevia, it still tastes good (to me). :) I bet you could use chunks instead of chocolate chips in cookies as well.

    I have been wanting to try the raw cacao, just haven’t been able to justify the expense yet. However, I am sure I will be trying it eventually. I’m just far to much of a chocolate nut…they don’t sell it in big enough quantities! :P

    Erin, you’re most welcome! I hope you enjoy it! We just used this recipe tonight with my brownie recipe…it’s my hubby’s birthday, and we needed a tasty cake. After we made the chocolate, I mixed in some almond butter, and poof, we had frosting. It was fabulous! :D

  10. What is the difference between E.V. Coconut Oil and E.V. Olive Oil? I’m assuming a big one… just wondering!

    • If you use olive oil, the chocolate will not set up. The coconut oil is solid at room temp. :) It is what makes it possible to make it “chocolate”. ;)

  11. Hello, great recipe!

    One question, when I make this I end up with a layer of coconut oil on top. I only differ from your recipe by not using vanilla. I’m very new to cooking, any ideas on how to stop this? I could always just chop it off I suppose.

    • Hmmm, I’m not quite sure why that would be happening…never had it happen before. :S I wouldn’t think the vanilla would be causing it, but maybe. I would try it once, following the recipe exactly, and see if the outcome is different?? I will let you know if I come up with anything else.

    just 1 ques how would it be if i use vegetable oil or butter instead of coconut oil because i have an allergy with it.

    • I know that it wont work with the vegetable oil, I would never suggest you use that for anything anyway. It MIGHT work with butter, but I’m doubting it. The reason it works with the coconut oil is because of it being so hard at room temperature and even harder in the fridge or freezer. It is what holds the chocolate together. I don’t know what you could really sub for it. That stinks about the allergy. Wish I had another idea for you. :(
