Here it is, the promised paleo “peanut butter” cup creation! These things put Reese’s to shame, in my opinion. The dark chocolate with the creamy, gooey center, makes me want to melt right out of my chair!
This was a complete “last minute” experiment. I was trying to think of things for New Year’s snacking, and was really missin’ my days of candy and ice cream. So I had Steven pick up some raw almond butter from the store on his way home. I figured, worst case scenario, it would be good on celery.

Boy was I excited when THIS is what developed! Praise the Lord for creativity and experimentation!
You will need…
- A batch of Homemade Dark Chocolate (still in the pan and melted)
- 1/4 cup Raw Almond Butter
- 1 scoop Stevia extract
- 3-4 tablespoons of Blanched Almond Flour
- At least 18 small candy cups
In a cereal bowl, mix together the almond butter, stevia, and almond flour, and set aside.
You will need a cookie sheet or a small plate to put the candy cups on. I used a cookie sheet because I tripled the nut butter recipe. The recipe above will only make about 18 cups…but you will have A LOT of chocolate left over for other stuff…OR just make more nut butter filling!
Then you are going to put 1 teaspoon of melted chocolate into the bottom of each candy cup. Once they are all filled, pop them in the fridge for a few minutes so they can set up. This shouldn’t take very long, maybe 10 minutes or so.
Once they are solidified, you are going to take them out and put a rounded teaspoon (about 1 teaspoon) of the nut butter mixture right in the middle.
Follow that with 1 more teaspoon of your melted homemade chocolate, and voila!
About an hour or so in the freezer and they are fit to be devoured!
